This sounded So good to me, I can't wait to make it! Just thought I would share it in case it sounds good to anyone else!
1 C Fresh raspberries 1/2 C sugar
2 tbsp vegetable oil 1 C minced watermelon
1 C chopped scallions 8oz cream cheese
1 clove minced garlic whole grain crisp flat breads or crackers
1-2 minced seeded jalapeno pepper
Heat oil in 3-quart saucepan over med-high heat and saute scallions, garlic, and jalapenos until toasted. Reduce heat to low and add raspberries and sugar. Bring to slow simmer and stir occasionally for 5-7 minutes. Remove from heat to cool. Refrigerate until chilled. Stir in watermelon. Place cream cheese on a platter and pour some salsa over it. Serve dish and remaining salsa with chips.
Makes about 3 cups of salsa.
